My First Snow Breakfast

To some that may imply that I ate breakfast in the snow, or maybe...

I ate snow for breakfast, nope!

Although it snowed last weekend it was barely there, so when I woke up to a baby blanket of snow on Sunday it was a great excuse to try out a new cast iron recipe.

1/4 cup granulated sugar 1/3 teaspoon ground cinnamon 3 large eggs 1/2 cup milk 1 teaspoon grated lemon zest 1/2 cup all-purpose flour 1/2 cup unsalted butter, divided 2 tart apples(Granny Smith), peeled, quartered, and sliced 1/4-inch-thick Sifted confectioners' sugar
Preheat the oven to 450 degrees

Now when I saw this recipe it reminded me of great times out with BFFFF at the Original Pancake House. They have a great apple pancake that takes about 2 days to eat. I was hoping this would be familiar. The recipe itself seemed too easy and it really was. When the apples didn't fill up the bottom of the pan I decided to add some blueberries.
For all the butter and sugar that was in this recipe, I had hoped it would be more oooey and gooey. The pancake base tasted more like a crepe. Sooooo it was not up to OPH standards so I hope it snows again soon. Another excuse to try a new recipe.
